Breakfast Chili Cheese Casserole
4 cups Monterey Jack and Cheddar cheeses - mixed (they have the blend in
most stores)
2 small cans mild chopped green chilies
2 large jars chopped pimentos
8 eggs
1/2 cup milk
1 cup chopped ham or bacon (optional - but who wouldn't?)
1/4 tsp pepper
Sprinkle cheese in buttered 3 qt Pyrex oblong pan. Sprinkle chilies and
pimentos on top of cheese. (also ham or bacon if you are using them)
In a separate bowl, beat eggs, milk and pepper until frothy. Pour over
cheese.
Bake for 30-40 minutes in a 350 degree oven.
Let stand 15 minutes before serving.
