Peach French Toast 


1 c. + 1 T. sugar, divided
1/2 cup flour
large bag frozen peaches (4-5 cups)
1 teaspoon orange rind
1/3 cup orange juice (fresh is best)
1/4 cup butter, melted
1/4 teaspoon cinnamon
3 eggs
Cinnamon bread, cut into triangles


Spray a 9” x 13” pan. Combine 1 c. sugar, flour, and peaches. Combine and beat orange rind and juice, butter, cinnamon, and eggs; add to peach mixture. Dip bread into this mixture. Overlap in pan and sprinkle with 1 T. sugar. At this point, you may refrigerate overnight. Bake at 350º for 45 minutes. (Serves 6-8)
