Wild Rice Casserole

 


1 c. wild rice or long grain and wild rice
4 c. boiling water
1 can cream of mushroom soup
1 can cream of chicken soup
2 small cans mushrooms, drained
2 beef bouillon cubes in 1 cup hot water
1 tsp. salt
1 bay leaf ( optional)
1/4 tsp. EACH celery salt, garlic salt, onion salt, paprika
6 tbsp. chopped onion
3/4 c. chopped celery
1/2 c. slivered almonds
1 1/2 lbs. ground beef (optional)

Pour boiling water over rice and let stand 15 minutes, drain. Place rice in a large casserole, add soups, mushrooms, celery, onions and seasoings. Brown meat and mix in almonds, saving a few almonds for the top. Refrigerate for an hour or overnight.

Bake at 350 degrees for 1 1/2 hrs. Or, cook in crock pot on High for 4 hours, checking for doneness. I used the crock pot and had it on High most of the time.

If you don't want the celery crunchy, sauté it for a few minutes and then add to the casserole.

Don't over stir or it will get mushy.

Serves 8 - 12.
