Yummy Berry Pudding

 

1 10-ounce package frozen strawberries, thawed
1 10-ounce package frozen berries of your choice (or other fruit), thawed
¼ cup cornstarch
2 tb sugar
½ cup cold water
1 ½ tb lemon juice

slivered almonds (optional)
whipped cream (optional)

 

Puree the berries in a blender. 

Mix the cornstarch and sugar in a saucepan.  Gradually stir in water, then add berry puree. 

Heat to boiling, stirring constantly.  Let boil for 1 minute, keep stirring.

Remove from heat and add lemon juice.  Sprinkle a little sugar over the top to keep a skin from forming.  Cover and refrigerate for at least 2 hours. 

Tastes great on its own, but serve topped with almonds and whipped cream if desired!

 

Note: if using larger packages of berries, add a little more cornstarch and water
